Mmmm. Tis the season for pumpkin pies! But if you’re dairy free and egg free, not to mention gluten-free, there’s not a lot in a pumpkin pie that works for you.

What does work? Coffee. Coconut milk. Pumpkin. Why not put them all together?

And who knew? I was quite sure that when I did a Google search for a recipe, I would find nothing. But turns out I’m not the only person to have this craving. I bet it’s all about this time of year.

I decided to make up my own recipe anyway though. And honestly, I was so sure it would be great, that I started writing this blog post before I even ran my blender! Safe bet that the smoothie was good though, otherwise this post would’ve been scrapped and you never would be reading it ;)

Pumpkin Pie Latte Smoothie Ingredients:

1 cup coconut milk (I like refrigerated kind in a carton – like Silk)
7 cubes of frozen pumpkin purée – about 1 cup (how to roast a pumpkin)
1 cups chilled coffee (decaf for me at night!)
1 tsp pumpkin pie spice

Throw it all in your high-powered blender, press the smoothie button and voila! Pumpkin pie latte smoothie! For the record, you can probably use a regular blender for this smoothie, since the pumpkin cubes don’t freeze super-hard and are much easier to blend than ice cubes.

Haven’t roasted a pumpkin in awhile? Or ever? I like the simple steps over at Elana’s Pantry. I like to make up my pumpkin to have on hand, so after I roast mine, I scoop the cooked pumpkin into ice cube trays and freeze them for easy use later.

You can purchase pumpkin pie spice premixed, but I like to make up my own. It’s so simple and I can play with the ratios. At this time of year, I go through it pretty quickly, too.
